Peanut Butter-Toffee Blondies

I have been under the weather this week. Because of that and our wintry precipitation, the Food Network has been on quite a bit. This recipe is from Down Home With the Neelys. Blondies are one of my favorite cookies because they are so easy (just spread the batter in a pan; no scooping required). The peanut butter flavor is subtle, but it pairs nicely with the toffee chips. Next time, I will add chocolate chips to the batter—they need a little more chocolate to balance the other flavors. Peanut Butter-Toffee Blondies
1 cup butter, softened
1/2 cup peanut butter
1 cup brown sugar
1 cup granulated sugar
3 eggs
1 Tbsp. milk
2 tsp. vanilla extract
1 1/2 cups all-purpose flour
2 tsp. salt
1 package chocolate-covered toffee chips
1 package semisweet chocolate chips

1. Beat butter and next 3 ingredients until light and fluffy. Add in eggs, 1 at a time, beating just until blended after each addition. Add in milk and vanilla. Combine flour and salt; gradually add flour mixture to butter mixture. Add in toffee chips and chocolate chips. Pour batter into a lightly greased 13- x 9-inch pan.
2. Bake at 350° for 40 or until done.

Sam and I made these today and my husband has not quit eating them since he got home from work. Yummy!

You're right, the blondies are super fast! It took just minutes to put these together. They are so yummy! I'm going to have to share these w/ some neighbors so we don't eat them all!
